My Favorite Smokers
My method of smoking wings is a kamado grill. I have a green one and I have a red one. I loved the green one so much I bought a red one for our camper so I can smoke chicken wings when traveling (yes, that is proof I am obsessed with chicken wings).
I have used smokers, tried wings off of pellet grills. There is something special about the kamado style with indirect heat. The airflow acts somewhat as a convection oven effect and creates the perfect texture. I just have not been able to duplicate that with a regular smoker or pellet grill. Don’t worry, I’m committed to trying to duplicate on many cooking vessels and sharing the results. The bar has been set, the wings perfected on a kamado style cooker.
Upside to the Kamado Style Grill
- Holds temperature very well
- Easy to adjust temp mid cook
- 10 hours of smoking without adding charcoal
- Open up top vent at end of cook to further crisp (easier than any other grill)
- Excellent for cooking other foods as well, very versatile “all in one” grill that make amazing chicken wings
Drawbacks
- Charcoal is messy and takes time to get up to temp
- Cleanup is a pain and these have to broken down occasionally for a deep clean
- Not as easy as pellet grill just set and forget
- Expensive
- Everything is an accessory
